This recipe is an adaptation from the Publix Apron's recipe for parmesan chicken. It is also healthier as I substitute packaged bread crumble for my own. This recipe is a real time-saver and kids love it.

This is a recipe that has taken me a while to perfect and, though measurements aren't approximate, the dish can be pulled off with ease and can be a crowd-pleaser. It's a very light and healthful dish that's great for a family dinner or even a date.
I found a pack of quinoa in my pantry and came up with an idea. I'm going on a trip in a week and I need to start a diet so why not start with a quinoa salad?
This year, I spent Thanksgiving with an old friend of mine who I haven't seen in 7 years. I thought I should make something special and so I did. Originally, I was going to make mashed potatoes and then I realized that I didn't have enough ingredients (or should I say, Publix didn't have enough purple splendor potatoes in the shelf.) So I ended making this and it still came out really well. I will make purple potatoes someday and post it here. One weekend, I felt like making myself a refreshing noodle salad and being that the night before I had made a stir-fry at home, I used some of the leftover ingredients and sauce again for this cold noodle salad. I left it to cool down for about 1/2 an hour and served it on a bed of fresh baby spinach. This is a healthful and satisfying recipe that you can make yourself for lunch. This recipe is very vegetarian-friendly and gluten-free. *NOTE: This recipe is based on a stir-fry meaning you can add in and take out whatever ingredients you want (i.e. snow peas, bell peppers, more spices if you like heat, etc.).
