This recipe is an adaptation from the Publix Apron's recipe for parmesan chicken. It is also healthier as I substitute packaged bread crumble for my own. This recipe is a real time-saver and kids love it. Here's how I made it:
Ingredients: 4 chicken breasts 1/4 cup rolled oats dried parsley fresh or dried basil 4 tbsp. parmesan cheese 1 tbsp. extra virgin olive oil 3 tbsp. mayonnaise S+P nonstick baking spray Steps: 1. Line a baking tray with aluminum foil and spray it with the nonstick baking spray. Set aside. Preheat an oven to 400 degrees Fahrenheit. 2. In a food processor, blend the rolled oats, herbs, s+p, olive oil, and only 2 tbsp. of the parmesan cheese until you have a crumb. 3. Mix the mayo with the remaining cheese; lay the chicken out on the baking sheet, spread enough of the mayo mix to evenly cover each piece of chicken, then dust the top of each piece with some of the rolled oats mix. Bake for about 10 minutes. 4. Serve with a side of your favorite pasta or just with some dijon mustard to dip. Enjoy!
